A signature is the person's name. If the product rewrites that name, drops an accent, or refuses a character, the signed document is wrong even when every other field is right.
Signing now keeps names and field values as they are typed. Accents stay. Other scripts stay. A signer can enter the name they actually use, and that is the name written into the document.
The same treatment applies to the other text they type into fields. A company name, a title, or an address is stored as entered, not forced into a smaller character set.
